Paul Lato is a Polish-born, Canadian-educated sommelier whose journey to winemaking embodies the spirit of the American dream. After a decade working in Toronto’s fine dining scene, Paul moved to Santa Barbara County in 2002 with no formal winemaking background—only a deep curiosity, relentless work ethic, and an unwavering passion for wine.
Paul meticulously selects exceptional vineyard sites—focusing not just on the vineyard, but on the most expressive blocks within each—partnering only with growers who share his pursuit of excellence. Yields are purposefully limited to concentrate flavor, and harvest decisions are guided by physiological ripeness, attuned to the nuances of each vintage.
